The BEST Protein Pizza
The BEST Protein Packed Low Carb/Gluten Free Pizza

By now we have all seen cottage cheese taking the internet by storm ha! While I like my share of it, I couldn't help but start rolling my eyes every time a new one would pop up. Well, last night my curiosity got the best of me so here we are.... This is by far my favorite high protein/keto pizza to date!
You will need:
- Either 8oz cooked chicken or 1 12.5 ounce can of chicken drained (I used a can of Trader Joe's Premium Chunk White Chicken)
- 8 oz cottage cheese
- 2 eggs
- 1/2 cup finely grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 teaspoon Italian Seasonings
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
How To:
- Preheat your oven to 400 degrees
- Line a baking sheet pan with parchment paper (I used a jelly roll pan because it keeps it from slipping away when you flip it over )
- have a second pan handy with parchment paper
- Mix all ingredients together (If using cooked chicken make sure to cut up the pieces prior to mixing)
- Spread the mixture out on your pan to about 1/4 inch thickness
- Bake for 15 minutes
- Using your other lined pan flip the crust over and then cook for another 10 min
- Top with your favorite sauce and toppings. In the picture I used sugar free BBQ sauce, bacon, onions and jalapenos
- Cook for another 5-6 minutes
